1 oz (28 g) Cascade · 5.5% AA First wort
1 oz (28 g) Cascade · 5.5% AA 10 min

2 oz (57 g) Cascade · 5.5% AA Dry hop

Other ingredients

2 oz (57 g) Sweet orange zest Last 10 min of the boil
1 oz (28 g) Coriander seed, crushed Last 10 min of the boil

Yeast and water

2 pkg English ale yeast (S-04), 2 packets
Water Balanced water.

Process

  1. Mash: 155°F (68°C) for 60 minutes
  2. Boil: 60 minutes
  3. Ferment: 66°F (19°C) until the gravity is stable
  4. Condition: Dry hop, then cold crash and package
  5. Carbonate: 2.4 volumes of CO₂

Based on 72% brewhouse efficiency and about 5.5 gal after the boil for a 5 gal batch. Adjust the base malt if your system runs higher or lower. Hops scale in a straight line; larger kettles extract a little more bitterness.

About this recipe

The brewer’s tweak on a very popular house pale ale: Maris Otter, Vienna and a little crystal, mashed a bit higher for maltiness, with Cascade throughout. S-04 drops clear, and a cold crash gives a clear beer with a slight orange tinge.

How to brew it

  1. Mash at 155°F (68°C) for 60 minutes. Add the first wort Cascade as you run off.
  2. Boil 60 minutes, adding the orange zest and coriander with the 10-minute hops.
  3. Chill to 64°F (18°C) and pitch. Ferment at 66°F (19°C).
  4. Dry hop with 2 oz of Cascade.
  5. Cold crash and package at about 2.4 volumes of CO₂.

Tips

  • Crush the coriander just before it goes in.
  • Sweet orange zest is bright; bitter orange peel is more like a witbier.

Frequently asked questions

Is it a witbier?

No. It borrows orange and coriander from witbier, but it’s a hoppy pale ale with English yeast.

Can I leave out the spices?

Yes, and you’ll have a great Cascade pale ale.
